The Need for a Local USDA Slaughterhouse

Farmers in northern Maine had limited options for USDA-inspected processing. The nearest facility was hours away, adding significant costs and logistical challenges. Moosehead Meats was established to fill this gap, providing Amish and non-Amish farmers with access to federally inspected processing while keeping locally raised meat in the region.


Building the Moosehead Meats Facility & Overcoming Challenges

Conrad and Jonas (Moosehead Meats) designed and built its facility over one and a half years, transforming a repurposed storage shed into a fully operational USDA-inspected slaughterhouse. One of the biggest challenges was meeting federal requirements without electricity, a core tenet of Amish traditions. This required:


  • Alternative energy solutions – Designed an operational system that met USDA requirements without electricity. This included sanitation methods powered by alternative energy resources, pneumatic systems for processing, and manual handling techniques optimized for efficiency. Identified refrigeration and water supply solutions that upheld food safety standards while operating independently of conventional power sources.

  • Compliance with USDA FSIS requirements – Structured sanitation, humane handling, and record-keeping systems to function within an off-grid framework. Developed methods for water temperature control, waste disposal, and monitoring procedures that aligned with USDA expectations while using non-electric processes. Adapted record-keeping practices to maintain full traceability and documentation without digital systems, meeting federal oversight requirements.

  • Custom facility design – Enhanced the existing facility layout to balance Amish traditions with USDA food safety and inspection protocols. Designed workstations and equipment placement to support efficient processing while maintaining clear separation of clean and contaminated areas. Addressed material selection and drainage solutions that supported sanitation standards while aligning with off-grid operations.

AgriForaging Food Safety’s Role

Moosehead Meats partnered with AgriForaging Food Safety to navigate the USDA approval process while maintaining its traditional production methods. AgriForaging Food Safety provided:

  • Regulatory guidance – Developed a compliance strategy that allowed Moosehead Meats to meet USDA requirements without compromising Amish principles. This involved working closely with USDA FSIS to clarify how traditional methods could align with federal regulations and structuring policies that maintained food safety while respecting cultural practices.

  • HACCP planning and food safety protocols – Developed a HACCP plan tailored to off-grid processing, making certain that food safety hazards were identified and controlled within the limitations of non-electric operations. Designed record-keeping procedures that met USDA expectations while remaining practical for a facility operating without digital systems.

  • Facility and equipment consultation – Evaluated processing requirements and identified both manual and alternative energy solutions that adhered to USDA standards. Provided recommendations for pneumatic systems in sanitation and processing, as well as mechanical refrigeration options that met inspection criteria.

  • HACCP training and certification – Provided in-depth HACCP training & certification to the Moosehead Meats team, covering hazard analysis, critical control points, monitoring procedures, and corrective actions. The training was structured to accommodate the operational realities of an off-grid facility while meeting USDA FSIS expectations.

  • Inspection readiness, USDA liaison support, and Grant of Inspection approval – Conducted pre-inspection evaluations to confirm compliance with USDA requirements before the official review. Worked directly with USDA inspectors throughout the approval process and helped Moosehead Meats secure its Grant of Inspection. Continues to provide regulatory oversight, allowing the facility to maintain compliance as operations grow.

USDA Inspection & Approval

In May 2024, Moosehead Meats became one of the few USDA-inspected Amish-run slaughterhouses in the country. This approval demonstrated that:

  • USDA FSIS regulations allow flexibility for operations without electrical infrastructure.

  • Food safety and traditional food production methods can align under federal inspection.

  • Other off-grid facilities can meet USDA standards with the proper planning and expertise.

Moosehead Meats is already making a measurable impact:

  • Supports local farmers – Moosehead Meats provides much-needed USDA processing closer to home, reducing costs and travel time for small-scale producers. By eliminating the need for long-distance transport, Moosehead Meats allows farmers to process livestock more efficiently while keeping more revenue within the local agricultural economy.

  • Bridges tradition and regulation – Proves that Amish food production can align with federal food safety standards without compromising core values. Moosehead Meats sets an example of how cultural practices and regulatory compliance can coexist by working within USDA guidelines while maintaining traditional, non-electric methods.

  • Offers a model for others – Demonstrates that off-grid facilities can successfully navigate USDA approval, providing a path forward for other Amish and traditionally operated businesses. The facility’s approval highlights the flexibility within federal regulations and the potential for alternative compliance solutions that support food safety without modern electrical infrastructure.

  • Strengthens local food systems Moosehead Meats keeps more meat in the community, supporting regional food security and sustainability. Offering local USDA-inspected processing reduces reliance on distant slaughterhouses and helps maintain a stable, community-based supply chain for locally raised meat.
